Shrimp can be sold according to their type, brown, white, pink, tiger and freshwater. There are many other varieties on the market but these are some of the most common. Very  often when buying shrimp, you cannot tell what type they are, especially if they have been shelled. The size of the shrimp becomes determining factor. They are sorted by size and given corresponding numbers and or names. These numbers, that should be on the package, will tell you approximately how many are in 1 pound.

CLEAN SHRIMP

If you are going to clean shrimp, they must either be fresh, or frozen that has been thawed before cleaning. The best way to thaw is in the refrigerator for 6-8 hours. Running them under cold water will work but I believe that you will loose some of the flavor. Do not use hot or warm water, it hurts the flavor.
Most shrimp are sold today with the head and legs removed, but if yours still have the head on simply pull it off, along with the legs.
Start at the head end, separate the shell, and just pull it off. Depending on how you want to display them you can leave the tail on or pull it off with the shell.
With a sharp knife make a shallow slit down the back of the meat. If you can see a dark vein running down the back, remove it. If not don’t worry about it. Rinse them under cold running water and pat dry.
