In order to cook abalone you will need to slice it about 1/4 inch thick and pound it gently until it is very limp. Don’t pound too hard because the fibers can break down and it can fall apart. Dip the pieces in milk, then in flour Melt enough butter in a pan to cover the bottom of the pan. Preheat the pan to medium high heat and sauté for 30 to 40 seconds on each side. Abalone can be eaten raw so it is better to have it slightly undercooked than over cooked. Over cooking makes it very tough.

Another Way to Cook Abalone

Pound the abalone gently to ½ its original thickness. Dip it in flour seasoned with salt and pepper. Melt enough butter in a pan to cover the bottom of the pan. Preheat the pan to medium high heat and sauté for 30 to 40 seconds on each side. Abalone can be eaten raw so it is better to have it slightly undercooked than over cooked. Over cooking makes it very tough.
